I had a question from a reader on my Homemade Survival Bar post:
Is there something you can substitute for the jello that would be organic to use for flavoring? I plan to go with stevia and honey rather than the sugar, as stevia will hold up longer and it is much better for the ol’ bod.
I’m opening this one up to my readers. I really don’t know. Any suggestions for an organic Jell-o substitute in the Survival Bar recipe? Post in the comments. Thanks!

I know that:
1 egg = 1 tsp gelatin, 3 Tbs cold water and 7 tsp boiling water
2 eggs= 2 tsp gelatin, 1/3 C. cold water and 1/2 C boiling Water
3 eggs= 1 Tbs gelatin, 1/2 C. cold water and 1/2 C Boiling water
So I'm sure it can go the other way, right?

MaryJanesFarm has a gelatin substitute that might work – she calls it ChillOver Powder.

I haven't used it myself, but it's recommended in place of gelatin in other things.

The jello acts as a binder and flavoring. I would replace all of the sugar with honey (so your total recipe would now be approx 1 1/4 cup of honey), and add 1/4-1/3 cup of flour. Maybe add some grated orange or lemon rind to balance the honey sweetness.

Hey, you guys are good! Egg might work for the binding, although not sure if it might decrease the shelf life of the end product. Grated orange/lemon rind should work well for flavoring. I might use that and unflavored gelatin next time. That sounds really good–not so sweet.
Once you start substituting ingredients, obviously the caloric claims of the original recipe may change also.

Organic gelatin is easily available, clear and flavour neutral. It's made from animal bones, so vegetarians probably have a substitute. My sister-in–law is a "raw chef", so I'll ask her..
