When I accidentally sent all the cheese from the fridge in sweet husband’s work cooler, it left me in a pinch for my burrito lunch yesterday. I really didn’t want to go to the store for more cheese, so I got out my Thrive freeze dried shredded cheddar cheese. Maybe you’re wondering if freeze dried cheese would melt on a burrito. Well, yes and no. It doesn’t melt if it’s still dry–it just turns into burnt little dry cheese sticks. But it does melt if it has been re-hydrated first!
To re-hydrate freeze dried cheese the best way, you put just enough water on it so that it almost soaks it all up, then put it in a ziplock type baggie for 4 hours or so until the middle isn’t dry anymore. But I wanted it now and didn’t care what it looked like, so I re-hydrated it the super fast way–put the cheese you want in a bowl and put in enough warm water that the cheese is kind of swimming in it.
Let it sit for about 10 minutes and then drain the excess water off. This method makes the cheese not quite as pretty looking and a bit extra soft, but it gets the soaking job done fast.
Then you can put your cheese on your burrito or whatever else you want it to melt on.
Heat it up, and voila! The freeze dried cheese melts just like fresh cheese!
