When we need a sandwich for lunch we skip the processed lunch meats and go for real meat instead. Lunch meats from the store are laden with additives and just go bad in my refrigerator waiting for someone to want to eat them. But a real meat sandwich is one even my husband, who is not a fan of sandwiches in general, will eat. So here are two great ways to get real meat in your sandwich!
1. Use leftovers. My mom was a pro at this. She’d grind leftover roast in a meat grinder and put it on sandwiches with the usual sandwich toppings. These were some of my favorite sandwiches as a kid. The meat could be mixed with a spread like mayonnaise to help it hold together better or just piled on the bread. You could also skip the grinder and slice pieces of roast, chicken, or turkey for your sandwich. If you’ve got leftover gravy and time for a sit-down meal, make a hot open face sandwich topped with your leftover meat and gravy. Whether you grind it or slice it, the meat can be frozen for future use.
2. Use bottled meat. This is our standby lunch meat. Tender and moist, we pull chunks out of the jar with a fork and break them into pieces to spread on the sandwich. Easy and fast. Husband likes salt and pepper, cheese, and lots of banana peppers on his. He doesn’t need sandwiches too often, so I usually use the rest of the meat in the jar for a family meal like chili or stroganoff within a couple of days of the sandwich making.
Real meat for sandwiches is healthier for you, easier to keep on hand, and decreases your dependence on the store. Enjoy!
Keep preparing! Angela
